An exquisite and fragile berry, rich in vitamin C, fruit of Rubus idaeus, a member of the Rosaceae family.
Very often red, there are also yellow and black varieties.



The raspberry bush

Rubus odorata of North America gives off a strong smell of resin from its shoots; Rubusdelicious has deliciously fragrant flowers; Rubus idaeus originated in the mountainous regions, moors and edges of forests with acid soil of Europe and Asia.
It grows in the wild in Scandinavia up to latitude 70° north.
Pliny, who believed they originated in Crete, called them “Mont Ida Brambles”.

The fruit

Raspberry bush have been grown in gardens in France since the Middle Ages when their leaves and fruit were consumed for their medicinal properties.
The many varieties have poetical names, for instance Merveille des 4 saisons, Bois blanc, September, Surprise d’Automne, Heritage, Malling Promise, Hornet and Amber...
Williamette is a particularly fragrant variety. It is widely farmed in the Balkans.

Raspberries give a unique colour and add a little touch of acidity to all preparations in which they are used: sorbets, jellies, wines and liqueurs.
