Raspberry
Exquisite, fragile berry that is rich in vitamin C, fruit of the Rubus idaeus, and of the Rosaceae family.
It is most frequently red in colour but yellow and black varieties also exist.
Rasoberry bush
The North American Rubus odorata’s shoots release a strong resin smell; the Rubusdelicious has delicately perfumed flowers; the Rubus idaeus originates in mountainous regions, marshes and forest edges where the soil is acidic, in Europe and Asia.
It grows wild in Scandinavia, up to 70° North latitude.
Pliny, who thought they came from Crete, called them “Mount Ida brambles”.
The fruit
Raspberry bushes have been grown in French gardens since the Middle Ages, a period where their leaves and fruit were used for their medicinal benefits.
Certain varieties have highly-poetic names such as: Merveille des 4 saisons, Bois blanc, September, Surprise d’Automne, Heritage, Malling Promise, Hornet and Amber, etc.
Williamette is a highly-aromatic variety. It is grown extensively in the Balkans.
Raspberry gives an original colour and a slight hint of acidity to all preparations that it is included in: sorbets, jellies, wines and liqueurs.
Cherry Rocher uses the highly-aromatic Williamette which gives our crème de framboise its exquisite intense colour.
